Stuffed peppers with wine Sardines

If you know me, you know i love food and i like trying out new things. The latest love is sardines. I love to make my food from scratch, but i also like trying ready made healthy foods. While at World Market recently, i picked up a can of Sardines and some Couscous. Growing up, Sardines were not my favorites of food, but as i have grown and watched enough cooking shows to show me how they can be well prepped, i must tell you that when you try this, you will love Sardines!

  • 1 can of Sardines
  • 1 can French Bistro on the Go Couscous
  • 1 clove of minced garlic
  • 1/4 cup white wine
  • Herbes de Provence (you can use fresh or dried dill)
  • 1 green pepper cleaned and cut in half

  1. Sardines are normally packed in oil. Do not get rid of the oil, you will use if for your couscous.  Heat a little olive oil in a small pan and add the minced garlic and Sardines
  2. In separate pan, on medium to low heat, add the couscous into the Sardine oil
  3. Season your couscous with a little garlic salt while you continue to stir
  4. In the Sardine pan, add a little garlic salt, about a 1/4 cup white wine and 1 tspn of butter
  5. Stir or just move the fish around the pan

This whole process takes less than 10 minutes

Stuff the peppers with the Couscous and then add the fish on top. This is not only delicious but it is healthy and quick for those weeknights when you want something good but you are too tired to spend a ton of time in the kitchen. Please share feedback when you try this
