Creamy sweet potato and ginger soup

There is nothing more amazing than finding the perfect soup recipe. As the cold season approaches, Iย thought I’d share one of my absolute favorite soup recipes. It so easy and i know you will love it! Feel free to share how it turns out for you when you try it out ๐Ÿ™‚


  • 2 large peeled, and cubed sweet potatoes
  • 1 small onion finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • A pinch or two of paprika
  • 1 1/2 tspn minced ginger
  • 1 32 oz carton of Chicken broth
  • I cup cream
  • 1 Tbspn brown sugar
  • 1 tspn dried tomato flakes (optional)


  1. Using olive oil, saute your onion, garlic and sweet potatoes
  2. Keep mixing for about 8-10 minutes (you want the potatoes to start caramelizing a little)
  3. Add your salt, pepper, paprika and ginger and mix well
  4. Lower the heat and add your broth

5. Sprinkle your tomato flakes, cover pot and let simmer for 20-30 minutes ( or until the potatoes are fork tender

6. You can add your sugar at this point because if you do it in the beginning, it can stick to the bottom of pot

7. Remove from heat and using your blender, puree mixture while you slowly add your cream

PS. If you can, It’s wise to cover the pot with something as you puree or else you’ll be cleaning sweet potatoes off the walls like i learned the hard way ๐Ÿ™‚
